cashew-processing The cashew nuts is a popular snack often eaten on lightly salted or sugared.   Cashew nuts, like all nuts, are an excellent source of protein and fiber.  They are rich in mono-unsaturated fat which may help protect the heart. Cashew nuts are also a good source of potassium, B vitamins and folate.  They contain useful amounts of magnesium, phosphorous, selenium and copper.

In the Philippines, cashew nuts is a known product of Antipolo, and is eaten with suman. Pampanga also has a sweet dessert called turrones de casuy which is cashew marzipan wrapped in white wafer.

Processing of Cashew Nuts

Candied Cashew

Ingredients:

  • 300 g (21 tbsp) Cashew nuts
  • 200 g (14 tbsp) Sugar, granulated
  • 1 pc egg yolk
  • 112 g (8 tbsp) Butter

Procedure:

  1. Combine the ingredients in a sauce pan.
  2. Cook until thick.
  3. Place the small paper cups.
  4. Brush the tops with beaten egg yolk.
  5. Bake in hot oven until brown.

Pastillas de Casuy

Ingredients:

  • 1 can Condensed milk
  • 150 g (10 1/2 tbsp) Cashew nut, ground
  • 20.5 g (1 1/2 tbsp) Corn syrup
  • 5 ml (1 tsp) Flavoring

Procedure:

  1. Combine all ingredient and cook until paste-like in consistency.
  2. Transfer into buttered board, and roll out until it is 1.5 cm thick.
  3. Cut into pieces and roll into sugar.
  4. Wrap in wax paper.

Cashew Brittle Recipe

Ingredients and Necessary Materials:

  • 1 1/2 cups salted cashew pieces
  • 1 cup of sugar
  • 1 cup of real butter
  • 1 tablespoon of light corn syrup
  • Candy Thermometer
  • Wax paper
  • Baking Pan

Procedure:

This recipe makes one pound Cashew Brittle

  1. In a 2-quart saucepan, combine sugar, butter, and corn syrup. Cook at low heat and stirring occasionally until candy thermometer reaches 290 degrees. This should take about 25 to 30 minutes.
  2. Remove from heat.
  3. Then stir in cashews.
  4. Spread to 1/4-inch thickness on waxed paper lined baking pan.
  5. Let cool completely.
  6. Then break into pieces.

Chocolate Covered Cashew

This candy is easy to prepare and makes a beautiful dessert or a wonderful gift

Ingredients:

  • 1 Cup of chopped raw cashews
  • 2 Cups of white chocolate chips or chocolate chips

Procedure:

  1. Melt the chocolate chips in either a double boiler or microwave
  2. Add the nuts to the chocolate
  3. Stir until the mixture is combined well
  4. Drop this mixture by rounded teaspoons into 36 paper or foil candy cups
  5. Chill for at least 30 minutes before serving
