Garlic ProcessingGarlic (Allium sativum), is a specie in the onion family Alliaceae. It is popularly known as Bawang here in the Philippines. Garlic is a close relative of onion (sibuyas), shallot, leek and chive. Garlic is widely popular for its bulb and has been used  for both culinary and medicinal purposes.

Garlic has a characteristic pungent, spicy flavor that mellows and sweetens considerably with cooking.  It  is also claimed to help prevent heart disease including atherosclerosis, high cholesterol, high blood pressure, and cancer.  Garlic is a relatively good source of calcium, phosphorus, and potassium.  Its leaves are sources of protein and of Vitamins A and C.

Let us process Garlic. There are many business products that we can make out of garlic. Here are some simple recipe on how to process garlic and make them a good business to start.

Garlic Enriched Polvoron

Ingredients:

  • 1 kg. Flour
  • 1 kg. Skim Milk
  • 1 kg. Butter
  • 1 tbsp. Garlic Powder

Procedure:

  1. Shift dry ingredients together.
  2. Cook until light brown in color.
  3. Melt butter.
  4. Add butter until equally mixed with other ingredients.
  5. Mold and wrap with color cellophane.

Garlic Chips

Ingredients:

  • Sliced Ilocos Garlic
  • Vegetable Oil
  • Iodized Salt

Procedure:

  1. Fry until light brown in color.
  2. Spread in a tissue paper until cold and packed.

Garlic Enriched Miki Noodles

Ingredients:

  • 1 kg. All Purpose Flour
  • 1 tbsp. Garlic Powder
  • 2 cups of water

Procedure:

  1. Shift and mix dry ingredients together.
  2. Prepare the dough.
  3. Slice the dough into desire size.
  4. Knead the dough or roll-in.
  5. Cut the noodles using a machine.
  6. Let it dry and pack.

Garlic Powder

Ingredients:

  • Ilocos Garlic Flakes
  • Rice Flour

Procedure:

  1. Grind Ilocos garlic flakes by using a blenderizer until desired softness.
  2. Shift and add rice flour.
  3. Mix together.
  4. Pack using desired bottle.

Garlic Flakes

Ingredients:

  • Ilocos Garlic

Procedure:

  1. Remove the skin.
  2. Separate the gloves.
  3. Peel
  4. Wash and clean the peeled garlic.
  5. Slice the cleaned garlic.
  6. Spread the cleaned garlic in a cheesecloth using tray.
  7. Insert tray in a mechanical dryer under 60 degree Celsius until fully dried.
  8. Pack after drying.

Garlic Pickles

Ingredients:

  • 1/2 kg peeled/s iced garlic
  • 1 tsp garnishing (carrots, red chili, onions)
  • Brining solution (1/2 cup salt + 2 cups of water)
  • Pickling solution (1 1/2 cup white sugar + 1 1/4 cup sugar + 1 tsp salt)

Procedure:

  1. Peel the garlic.
  2. Clean and wash.
  3. Slice and wash.
  4. Prepare and boil brine solution until salt is totally dissolved and let it cool.
  5. Soak peeled garlic overnight with brine solution.
  6. Remove the brine and wash with running water to remove excess salt.
  7. Prepare garnishing.
  8. Arrange the garlic and garnish it according to the desired bottle.
  9. Prepare pickling solution using stainless kettle.
  10. Add pickling solution into the bottle with garlic filling them not higher than one inch from the top.
  11. Sterilize and remove bubbles.
  12. Pack and label it properly.
