Rufo's Famous TapaRufo’s Famous Tapa was first started in 1984 as a small eatery situated in Kalayaan Avenue, Makati City. A group of friends started a food venture as a means to supplement their income from the accounting firm that employed them. In “honor” of, but unbeknownst to their boss in the company, they named the restaurant after him and thus, “Rufo’s” was born.

Rufo’s quickly gained a following for serving delicious, affordable and freshly-cooked Filipino food 24 hours a day, 7 days a week (24/7). Customers came at all hours of the day, with office employees from nearby companies and foreign students and teachers from the International School dropping in for breakfast, lunch, dinner and ice cold beer. After dinner until early morning, the clientele consisted of band members, disco-goers and over-timers looking for a quick, affordable after midnight meal.

While Rufo’s served an array of delectable comfort food such as the Liempo, Boneless Bangus and Pork Chops, its best-seller was the legendary Beef Tapa. And although the “Tapsilog”; or tapa(fried beef strips), sinangag (garlic rice) and itlog (egg) was a staple meal in the 1980’s it was really the way in which Rufo’s served its tapa that was so innovative and unconventional.

Rather than the typical dry, hard and chewy tapsilog that was common among its competitors, Rufo’s famous tapa was soft, juicy and served with a rich, sweet sauce. Rufo’s dared to break the “rules” and was amply rewarded as the “Famous Tapa” became a hit among customers with the catchy company tag-line, “Sauce Pa Lang, Ulam Na!”

The 80’s and 90’s saw the humble eatery continue to serve its loyal customers until 2003 when the owners decided to sell the company to its current President and owner Paul Izon Reyes. Mr. Reyes, once himself a customer of Rufo’s as a former student of the nearby International School Manila, founded Rufo’s Famous Franchise Corporation (RUFOCORP) with the ultimate goal of expanding Rufo’s through franchising.
