How to make Cassava Cookies

Ingredients:

  • 2 1/2 cup cassava flour
  • 2 1/2 cup wheat flour
  • 5 tsp baking powder
  • 1 cup margarine
  • 1 1/2 cup sugar
  • 2 pcs eggs

Procedure:

  1. Sift together the measured baking powder and cassava flour.
  2. In another bowl, cream the margarine.
  3. Gradually add the sugar and egg to the creamed margarine.
  4. Add the flour mixture to the creamed margarine and blend well to form a soft dough.
  5. Grease the baking pan with oil or butter.
  6. Form the soft dough into small balls (approx. 5 g) and place on the greased pan.
  7. With the use of kitchen pork, flatten the balls.
  8. Bake in a pre-heated oven until golden brown.
  9. Remove the baking pan from the oven.
  10. While it is hot remove the cookies from the baking pan to avoid scorching.
  11. When the cookies are cool, pack in a plastic bag.
  12. Seal and keep till use or consume.

How to make Cassava Coconut Cookies

Ingredients:

  • 2 1/2 cup wheat flour
  • 2 1/2 cup cassava flour
  • 1/2 cup sugar
  • 1 cup butter or margarine
  • 2 pcs eggs
  • 5 tsp baking powder
  • 2 cup “sapal” or desiccated coconut

Procedure:

  1. Sift together the measured baking powder and cassava flour.
  2. Add “sapal” to the baking powder and cassava flour mixture.
  3. In another bowl, cream the margarine.
  4. Gradually add the sugar and egg to the creamed margarine.
  5. Add the flour mixture to the creamed margarine and blend well to form a soft dough.
  6. Grease the baking pan with oil or butter.
  7. Form the soft dough into small balls (approximately 5 g) and place on the greased pan.
  8. With the use of the kitchen fork, flatten the balls.
  9. Bake in a pre-heated oven until golden brown.
  10. Remove the baking pan from the oven.
  11. While it is hot remove the cookies from the baking pan to avoid scorching.
  12. When the cookies are cool, pack in a plastic bag, seal and keep till use or consume.

How to make Cassava Cheese Crackers

Ingredients:

  • 2 1/2 cup wheat flour
  • 2 1/2 cup cassava flour
  • 1/2 cup sugar
  • 1 tbsp margarine
  • 1 tbsp baking powder
  • 1 1/2 cup water

Procedure:

  1. Sift together the measured flour and baking powder.
  2. Mix sugar, margarine and oil into the flour mixture.
  3. Add water and grated cheese gradually.
  4. Knead the dough until smooth with the hill of your palm.
  5. Roll the dough with a rolling pin into thin sheets of about 1/4 inch thick.
  6. Cut with a cheese cracker cutter and make perforations on the surface with the use of pointed wire.
  7. Place on a greased baking sheets.
  8. Bake at 475 C and remove from oven after 20 minutes. Let it cool.
  9. Pack in a cellophane till use or serve at once.

How to make Cassava Butter Cake

Ingredients:

  • 1 3/4 cup cassava flour
  • 1/4 cup mongo flour
  • 1 cup sugar
  • 1 cup diluted milk
  • 2 pcs egg (yolk and white beaten separately)
  • 2 tsp baking powder
  • 1/2 cup margarine
  • 1/2 tsp vanilla

Procedure:

  1. Sift together the measured baking powder and cassava flour.
  2. In a mixing bowl, cream margarine until smooth. Add sugar gradually and mix well.
  3. Alternately add egg yolk, dry ingredients and milk. Mix thoroughly in one direction until well blended.
  4. In a separate mixing bowl, beat the egg white until stiff peak is form.
  5. Fold in the mixture to the beaten egg white.
  6. Pour the mixture in an ungreased baking pan.
  7. Bake at 307 C for 25 to 30 minutes.
  8. Remove from oven and allow to cool before serving.
  9. Cassava butter cake ready for consumption.
