How to make Chicken in Lemon and Basil Sauce

How to make Chicken in Lemon and Basil Sauce

Ingredients:

  • 1 ½ kilo chicken, dressed and skinned, cut-up in serving pieces
  • 2 tbsps. light soy sauce
  • 2 tbsps. lemon juice1 tbsp. sugar
  • Dash of salt and pepper
  • 2-3 pcs. bay leaf, slightly crushed
  • 1 tbsp. cone vinegar
  • 2 tsps. young onion shoots, finely chopped
  • ½ cup water

Sauce:

  • 2 tbsps. fresh basil leaves chopped
  • ¼ cup water
  • ¼ lemon juice
  • 2 tbsps. honey
  • ½ cup chicken stock
  • 1 tbsp. cornstarch
  • Dash of salt and pepper
  • 1 tbsp. each young onion shoot, light soy sauce, oregano and cane vinegar

Procedure

  1. Boil chicken until tender. Cut into serving pieces.
  2. In a shallow pan, cook the chicken with all the ingredients for 20 to 25 minutes in low heat. Mix the ingredients constantly until the liquid is almost dry.
  3. In a separate pan, dissolve cornstarch in ¼ cup of water and mix all the ingredients of the sauce and cook over low heat until the mixture is slightly thickened.
  4. Put the chicken in a serving plate and pour over the sauce. Garnish with slices of lemon and sprinkle with more freshly-chopped basil. Serve while hot.
  5. Makes six to eight servings.
