Leonings Pancit Palabok was initiated by Leoning’s mother, Juana; she was known in her barrio because at Special Pansit Palabok and Luglug which is bearing the flag of her impressive array of pancit and native kakanin. During the Japanese era, the business became more lucrative and highly patronized because of scarcity and non-availability of foods during the regime and triples the demand.
During those times, the elders call it as “LugLug” derived from the fact that the process of cooking the noodles itself, is by soaking the noodles for several minutes in boiling water. It is same as “Palabok” because of different ingredients mixed with the noodles and the “Caldo” Spanish work for sauce.
Now the family business has flourished and offer other food varieties upholding Lutong Bahay that in every order it must be newly cooked; Leoning’s Longevity and Culinary Heritage are maintained and managed by Leoning’s Food Services and Franchising Corp. with its branches at 361 Quirino Highway, Sangandaan, #47 Short Horn Street, Project 8 and #21-A Visayas Ave. Brgy. Vasra, Quezon City and became the landmark of sorts.
